Pulled Pork BBQ Spaghetti | on pellet grill

Oh, what to do with your leftover BBQ pulled pork. Make spaghetti with it of course. That may sound a little strange, but this recipe will fix your BBQ blues. I was excited to give this dish a try and was not disappointed with its rich and tangy flavor.

I have only driven through Memphis, but I heard that this is an iconic staple and usually served as a side. I had smoked a pork shoulder and had leftovers in the refrigerator the next day and the rest is history. 

Prep time: 30 minutes
Cook time: 1 hour 15 minutes on the pellet grill
Cook temperature: 225°

Pulled pork BBQ spaghetti


























Ingredients

1 16-ounce package of spaghetti noodles
1 pound of your leftover pulled pork 
1/2 diced onion
1 Tbsp minced garlic
1 14.5 ounce can of diced tomatoes 
1 15 ounce can of tomato sauce
1 cup of your favorite BBQ sauce
4 ounces of cream cheese cubed
8 ounces of shredded cheese (I used Colby and Monterey Jack)
3 Tbsp of your favorite BBQ rub
1 Tsp of oregano


Instructions

Make sure your leftover pulled pork is ready and if frozen thaw completely. In a pot boil your spaghetti noodles to al dente, and drain. In a small skillet add your diced onion and garlic and sauté in olive oil until onion turns clear. 

Grab a 9"x13" disposable aluminum pan. I like these from Amazon. Spray nonstick spray to your pan. Add noodles to your pan and combine the cream cheese and sautéed garlic and onion, oregano, pulled pork, BBQ sauce, diced tomatoes and tomato sauce and mix in half of the shredded cheese, and your BBQ rub. I like Killer Hogs "The BBQ Rub". Once all ingredients are combined will in your pan add the remainder of the shredded cheese to the top.

Place in your pellet grill at 225° for approximately an hour and fifteen minutes giving a good stir halfway through your cook. 

Serve and enjoy!
