How to Spatchcock a chicken or turkey

Essentially spatchcocking a chicken or turkey is an easy process, and it is done to provide a more even cook to your poultry. It decreases the cooking time by roughly twenty-five to fifty percent. Always cook to internal temperature not to time. Spatchcocking the bird lays the backside of breast and thighs flat and gets them closer to the heat source. You can spatchcock any poultry.

To spatchcock your poultry place breast side down on a flat surface and then use a pair of poultry shears to cut and remove the backbone. I purchased these shears off Amazon and they work great. 

Then flip your bird back over breast side up once the backbone has been removed and push down on the center of the breast until the bird lays flat. Position the thighs so they are lying flat as well.
