What is Chimichurri Sauce

Chimichurri is an uncooked fresh ingredient green sauce that is used a table condiment for meat. Chimichurri is fresh herbs and spices combined with oil and red wine vinegar. You could also use as a marinade or put over the meat while you are cooking.  This sauce originated from Argentina and there are various variations. 

In this recipe I will show you how to make the more traditional green sauce found in the states. It's not a spicy sauce but is packed with flavor that pairs well with your steak, chicken, veggies, pork, salmon, tuna, shrimp, and salads. 


Ingredients

3-4 cloves of garlic 
1/2 cup of red wine vinegar
1 Tsp kosher salt
1 shallot 
1/2 cup of fresh cilantro 
1/4 cup of fresh parsley 
2 Tbsp or fresh oregano - If can't find the chopped dried oregano will work.
3/4 cup of extra virgin olive oil
Red pepper flakes - if you want it spicier.

Instructions

Finely hand chop garlic, cilantro, parsley, oregano and shallot. Hand chopping is more of a traditional way to make than putting in a food processor. Combine your chopped ingredients to a bowl. Then add your red wine vinegar, kosher salt, extra virgin olive oil and red pepper flakes. Mix all ingredients in bowl add your red pepper flake to your taste. Serve this at room temperature. If you put in the refrigerator it will turn into a solid, place back on countertop to serve at room temperature.
